My writing has gone by the wayside as I have about 4 other big projects on the go that are time consuming. But, here’s a quick fun recipe for when you want crepes without all the fuss or more often like myself have run out of baking ingredients and are just trying to make it through the week until grocery day. ENJOY
- 3/4 cup Pancake mix
- 2 Cups Milk
- 1 (or 4 tbsp liquid) Egg whites
2.Mix milk and egg whites together, sifting in the pancake mix. Mix with a whisk until smooth, should maintain a watery consistency, add milk if too thick, or pancake mix if too thin.
Prep time: 5 minutes Cook time: 10 minutes Total time: 15 minutes Yield: (4) 8″ crepes
